'Spy Bar is targeting a mature audience, the sorts of people who want to be able to chat while listening to high-fidelity music and drinking high-end cocktails,' says Bardy.
The highball machine is a callback to the Japanese roots of listening lounges, where people would gather in bars, bring their personal collections of vinyl, and drink Japanese whiskey.
'Drinks like the Mango Lassi play with clarification and precise techniques, resulting in a cocktail that looks nothing like the smoothie for which it's named,' Anaya explains.
