The first Greek-style pizza establishment in the U.S. emerged in New London, Connecticut in 1952, led by Greek immigrant Costas Kitsatis. His success inspired other entrepreneurs to adopt this pizza-making style, resulting in a proliferation of similar restaurants across New England, particularly in Massachusetts, which has a notable concentration of these family-operated pizza joints.
According to pizza guru and food tour guide Colin M. Caplan, a 'House of Pizza' serves New England Greek-style pizza. The slices combine elements of a traditional form of pizza, known as ladenia, a focaccia-like bread with tomatoes served on the Greek islands like Milos and Kimolos.
'[Kitsatis] and other Greek businessmen began teaching fellow Greek entrepreneurs and restaurant owners their style of making pizza and their business model, all being named Pizza House,' Caplan said.
