Plump truffle, potato, and mushroom dumplings were paired with the silky, dark-fruited Bin 389 Cabernet Shiraz 2023. Penfolds served the 2023 and 2013 Bin 707 Cabernet Sauvignons side by side, offering a rare vertical comparison of an iconic Cabernet over a decade. Both vintages complemented the 21-day-aged Angus Scotch beef wellington with truffle jus and creamy mashed potato, with the 2013 showing particularly expressive maturity. The cheese course featured the V22 FWT 585 Red Blend, an opulent Bordeaux blend that cut through aged English cheddar. Small glasses of Grandfather tawny aged a minimum of 20 years accompanied Bob Bob Ricard's Chocolate Glory, providing a sweet, raisin-rich finale as guests lingered with wine and music.
