Google's Android Switch will let you transfer data from an iPhone anytime you want
Briefly

Google's Android Switch app allows users to transfer data from an old iPhone to a new Android phone anytime after the initial setup is completed.
This capability to delay data transfer is currently exclusive to certain Pixel phone models, but will be available to more Android devices in 2025.
You can migrate data wirelessly or via a USB cable, with the latter offering a transfer speed that is 40% faster than last year's method.
The express setup option enables users upgrading from one Android device to another to move data without transferring cloud data.
