International students get more than a taste of American food in Claremont

International students at Claremont Graduate University are participating in a pilot program called Finding the Future in Food, which explores the multicultural food environment in Southern California. Led by Hideki Yamawaki, the program allows students to connect food with cultural and business insights, examining the transformations of cuisines like Japanese and Mexican. Sponsored by Seven & i Holdings, students work on projects analyzing eating trends influenced by social media. The program fosters collaboration between students and faculty to strategize new culinary trends, enhancing their understanding of the local market.
"The focus is learning about the multicultural business environment as well as the market in Southern California," said Hideki Yamawaki. Through food, students explore societal, cultural, and business aspects of LA.
"My original background is from Japan. And I'm mesmerized how the food coming from Japan is transformed into something very different from the original food... That's an interesting phenomenon,” commented Hideki Yamawaki.
"We love to eat," joked Jill Steggall, highlighting the program's engaging approach to learning about food culture.
Participants are required to investigate how social media influences eating habits, developing strategies to create new food trends, blending culture with business insight.
