Originally envisioned in 2005, the castle is the creation of the renowned Executive Pastry Chef Jean-Francois Houdré and his skilled team."

The Westin St. Francis Sugar Castle is a rotating sugar sculpture nearly 12 feet tall and weighing over 1,200 pounds, with more than 20 towers, about 30 rooms, illuminated windows, and a running train. Jean-Francois Houdré and his pastry team first conceived the castle in 2005 and expand its grandeur and innovation yearly. Visitors can explore the interior via immersive augmented reality on smartphones and search for Francis the Dog to claim a prize at the concierge desk. The installation is free and open to the public November 26, 2025–January 2, 2026 at the Westin St. Francis, 335 Powell Street. The castle will be in the Tower Lobby this year and there will be no public unveiling.
