The Sugar Castle was originally envisioned in 2005 by Executive Pastry Chef Jean-Francois Houdré and his pastry team. The rotating edible sculpture measures nearly 12 feet tall and weighs over 1,200 pounds, featuring more than 20 circular towers, about 30 rooms, illuminated windows, and a surrounding miniature village with a running train. The design resembles a French château inspired by Bordeaux and continues to evolve with added grandeur and innovation each year. Visitors can explore the interior via a smartphone augmented reality experience. The hotel mascot, Francis the Dog, roams the display; find him to claim a prize at the concierge. The installation is free and open to the public from November 26, 2025, through January 2, 2026, in the Tower Lobby at The Westin St. Francis, 335 Powell Street, San Francisco, and there will be no public unveiling due to space constraints.
