The Westin St. Francis Sugar Castle is a nearly 12-foot, 1,000–1,200-pound rotating sugar sculpture modeled after a French château, with over 20 towers, about 30 rooms, illuminated windows, a surrounding village, and a running train. Executive Pastry Chef Jean-Francois Houdré and his team originally envisioned and created the castle beginning in 2005, expanding its grandeur each year. Visitors can explore the interior via smartphone augmented reality and watch interactive details come to life. The hotel's mascot, Francis the Dog, roams the display and spotting him earns a prize at the concierge. The seasonal exhibit runs November 26, 2025–January 2, 2026, free to the public in the Tower Lobby, with no public unveiling event due to space constraints.
