Sabine, located in Seattle, emerged from the closure of the erstwhile Bastille bistro during the pandemic. Operated by Rich Fox and partners, Sabine transformed the space into a dynamic counter-service cafe with plans for further expansions. The pandemic proved a pivotal moment, allowing them to pivot and scale operations successfully. They adapted their interior and outdoor seating to accommodate new services such as takeout and dining options, resulting in a marked increase in guest count and revenue compared to pre-pandemic levels.
When the pandemic hit, some of our restaurants adapted better... Bastille had maybe run its course. The idea of shutting down and changing the concept during that time was easier than it would have been previously.
We had to take out a big portion of the seating to build the coffee counter... we had a 'streetery' that added back all of those seats and more.
