Proxi, which has been located on Randolph Restaurant Row for seven years, is reinventing itself to emphasize coastal Asian cuisine, particularly focusing on seafood. Chef Andrew Zimmerman and chef de cuisine Jennifer Kim are gradually transforming the menu, launching the refreshed offerings on April 16. The changes reflect a blend of flavors from various Asian countries while retaining some popular existing dishes. COVID-19 challenges prompted adaptations for Proxi, contrasting with sibling restaurant Sepia, which managed to maintain business through events and menus tailored to the pandemic's constraints.

Proxi's kitchen still produced stunningly unique and tasty food like a roasted lobster biryani, drawing on South Asian flavors.
