"Now, pork is a main part of our business," said Gonzalo Hernández, highlighting a shift to pork sales as beef consumption declines amidst economic challenges and austerity measures.
"The Argentine palate has changed. Pork is a cheaper, leaner alternative with a convincing flavor. So it's no surprise that people are going to buy it more to replace beef," noted livestock economist Franco Ramseyer.
