Monica Galetti will serve as executive chef at 130 Primrose, a new social enterprise restaurant in west London. The restaurant aims to employ and train individuals impacted by homelessness, with operations managed by head chef Eric Zhang. The menu will feature seasonal British ingredients with Mediterranean influences. Recruitment is through partner charities, offering six-month contracts and support for employees post-employment. Galetti plans to incorporate her Samoan heritage into the menu, enhancing the trainees' culinary skills and career prospects. The restaurant will provide all-day dining and a cocktail bar opening later.
