Tennessee stack cake, also called Tennessee Mountain Cake, originates in the Appalachian region and favors pantry staples and preservation techniques. The dessert consists of multiple thin, hard layers made from a dough rolled like a cookie and baked outside a pan, producing irregular discs. A wet filling made from reconstituted dried apples, sugar, spices, and sometimes molasses is spread between layers. After assembly the stack rests so the brittle layers soften and absorb the filling, yielding a tender, rustic apple cake. Variations exist in whether molasses is used in the filling or the dough.
