The 'intimate' spot will seat 26 people, and offer classic dishes like spicy miso ramen and chicken paitan, alongside a brand-new recipe inspired by London; 'the Salt Beef Bao'. This bowl is based on 'the flavours of a classic East End bagel' and will come with 'warm salt beef, pickled cucumbers, and fiery karashi mustard mayo'."
Ivan Orkin, a New York-born chef who moved to Japan in the 1980s, has built a reputation for refining ramen recipes. Orkin gained wider recognition after his 2017 appearance on Netflix's Chef's Table and ran a London pop-up in 2023. A permanent Ivan Ramen will open at 98 Farringdon Road on November 18, occupying an intimate 26-seat space. The menu will include spicy miso ramen, chicken paitan and a London-inspired Salt Beef Bao based on East End bagel flavours with warm salt beef, pickled cucumbers and karashi mustard mayo. Orkin described the opening as an incredible honour and praised London's ramen scene.
