""We look at trends. We ask, 'What do people like?'""
""Staples like tacos, chicken tenders, chicken fingers, burgers, and pizza are all proven concepts. We're not trying to reinvent the wheel here. We're just working to keep the wheel rolling.""
""We do a lot of homework before we enter a space to better understand how to increase margins for everyone involved, so we can pay better wages and have better quality food,""
""There's been a line every day for the last four months.""
Haley Pham and Khaled Simon run Sublime Hospitality, which operates once-vacant kitchens inside bars and venues to provide full food operations. The company selects proven, high-demand comfort-food concepts such as tacos, chicken tenders, burgers, and pizza to reduce risk and maintain efficiency. Taco Sublime began as a 2020 food truck and moved into Marz Community Brewing Company in 2021. Patty Please opened at Small Bar in May 2024. Buttermilk launched at Little Victories in March, where a chicken Caesar wrap produced long lines and strong customer interest. Sublime emphasizes increasing margins, paying better wages, and delivering higher-quality food.
