""Snail has always been about growth, and I believe these are the next steps in our journey," Florez wrote in the post. "We are incredibly excited about our new ventures, the future of our establishments and continuing our legacy as we move onwards and upwards.""
"It is unclear if Florez is retaining ownership of Snail Bar. But if the forthcoming rare pop-up with San Francisco legend Danny Bowien, of Mission Chinese, is any indication, Snail Bar is likely to still have a stellar food program. After it opened in 2021, the restaurant became an instant darling of the Bay Area food scene because of its eclectic natural wine selection - but also because of Florez's resume, which includes stints at Chicago's Alinea, San Francisco's Saison, New York City's WD-50 and Mugaritz in Spain. In 2023, Snail Bar was awarded a Bib Gourmand designation by the Michelin Guide for " multi-course meals at reasonable prices.""
Andres Giraldo Florez is relocating from Oakland to Padern, France, to take over an inn and is transferring Snail Bar operations to longtime employee Sammy Chang alongside chefs Lucas Dai Pra and Natallie Avitia. Dai Pra and Avitia currently operate Petite Percebes and previously worked at the two-Michelin-starred Harbor House Inn. Snail Bar opened in 2021 and gained acclaim for its eclectic natural wine selection and small plates. Florez's résumé includes stints at Alinea, Saison, WD-50 and Mugaritz. In 2023 Snail Bar received a Michelin Bib Gourmand. A noise complaint lawsuit was filed against the bar in 2024 by neighbor Christopher Cantor.
