San Francisco Roasting Institution Graffeo Coffee Enters New Era
""Luciano still roasts occasionally," Haas recently told Daily Coffee News. "He comes in in the mornings and will roast and will run the register. At 81 years young, he's certainly earned his retirement, but he's a fixture here.""
""I need probably 30 more years to learn it," Haas said. "Then I'll feel comfortable.""
Graffeo Coffee, founded in 1935 by Giovanni Graffeo in San Francisco's Little Italy, operates as one of North America’s oldest craft roasters. Walter Haas III purchased a majority stake from longtime owner and primary roaster Luciano Repetto, who remains a partner, co-owner, shareholder and owner of the North Beach building. The business focuses exclusively on roasting and continues to offer signature blends from Colombia, Costa Rica's Tarrazu region and Papua New Guinea, plus a decaf option. The North Beach roastery centers on a custom-built Sivetz fluid-bed roaster, and a smaller fluid-bed roastery in San Rafael serves Marin County customers.
