Hi Noon Hospitality will open Pinyon on October 29 in Old Town Scottsdale. Pinyon presents a coastal Mediterranean concept that celebrates flavors and techniques from 22 countries across the Mediterranean Basin. Adam Strecker, CEO and founder of Hi Noon Hospitality, traveled through the Mediterranean Basin, immersing in recipes, coastal traditions, and markets from Spain and Italy to Morocco and Turkey. The kitchen centers on a Barcelona-imported Josper Grill, a hand-forged live-fire charcoal oven that sears, smokes, and elevates ingredients. The culinary team plans dishes such as whole roasted turbot, prime flat iron, Pinyon's porterhouse, and charcoal-grilled skewers that balance smoke, texture, and depth.
