Noma announced a 16-week Los Angeles residency with $1,500 per-guest seats and sold out the entire run in 60 seconds, according to René Redzepi. The residency will serve a locally inspired tasting menu in Silver Lake from March 11 to June 26, with 42 guests per seating four days a week. The restaurant will stage multiple L.A. pop-ups, beginning with a Courage Bagels collaboration offering 250 bagels at $25 each topped with oyster mushrooms, pumpkin bushi, black pepper, savory rose fudge, nasturtium and bergamot. Redzepi said he does not expect to profit on the L.A. service and that the ticket price covers transporting and housing 130 staff from Copenhagen. Noma shifted to “seasons” of fine-dining menus instead of permanently closing; a current season runs in Copenhagen through July 26.
