Executive chef Guillaume Thivet at the Grand Brasserie, a 400-seat French cafe that opened in Grand Central Terminal's historic Vanderbilt Hall on Oct. 16, 2024, has introduced a late-night brunch served from 10 p.m. to 2 a.m., that is appealing to the city's many night crawlers."
"Beyond commuters, it's appealing to "those late-night owls who may need a nosh after they get out of a Broadway show, head home late from the office, or may even be starting their evening shift," he says. It appeals to New Yorkers and tourists and couples on dates, interested in a meal or a night cap, as well as solo diners and groups."
"Thivet notes that late-night brunch is often more relaxed than weekend brunch where it often gets so crowded that "you're not getting the eggs the way you want it." Brunch around midnight instead offers "a more casual atmosphere, with dishes such as French toast with a chicken schnitzel on top with honey. A nice nightcap before going to bed," he says."
