Ryan Panchoo developed Borough 22 Doughnuts after his two children experienced severe reactions to gluten and dairy, especially violent reactions to dairy. Borough 22 produces vegan, gluten-free and nut-free doughnuts and holds Halal and Kosher certification. The business began as a side project in October 2014 after Panchoo, who previously worked in property and started as a bricklayer, taught himself baking without formal cookery experience. The brand won awards and shipped nationwide from London, and now operates a six-week pop-up in Birmingham's Selfridges with potential for a longer stay. Panchoo perfected an allergen-friendly deep-fried doughnut after years of trial and error.
