"At Little Mountain, Moya will combine his growing relationships with local farmers with his experience at Lima, Peru's Astrid y Gastón, Paris's Le Comptoir and L'Arpège, and New York City's famed Casa Mono. Though Moya spent the last 25 years cooking in New York, he felt a pull to the West Coast. "I thought about the opportunity to cook out here," says Moya."
"Little Mountain's menu will follow the seasons and use a custom wood-fired hearth to cook the bounty that exists right in Montecito's backyard: locally grown vegetables, seafood, fermented goods, and meats. For the opening menu, Moya will serve bread with cultured butter, oysters, Santa Barbara's coveted sea urchin with winter citrus, a beef tartare with grilled tomato, grilled kale with mojo de ajo and mustard greens, and lobster croquettes for starters."
Little Mountain opens in Montecito's Upper Village on November 6 and features an expansive open kitchen with a custom wood-fired hearth for live-fire cooking. Chilean-born chef Diego Moya draws on experience at Astrid y Gastón, Le Comptoir, L'Arpège, and Casa Mono and will combine those influences with relationships with local farmers. Menus will follow the seasons and highlight locally grown vegetables, seafood, fermented goods, and meats. Opening starters include bread with cultured butter, oysters, Santa Barbara sea urchin with winter citrus, beef tartare, grilled kale, and lobster croquettes. Larger plates include rainbow trout with maitake, a hearth-cooked rib-eye with sofrito, and wild salmon with pistachios, with dishes intended for sharing and wine pairing.
