Michael Kwan, former Executive Pastry Chef at The Dorchester and chair of Team UK for the Coupe du Monde de la Pâtisserie, is opening ONSU bakery on Dean Street in Soho this January. The bakery will blend his Asian background with classic European techniques. The menu will include black truffle toast, black sesame doughnut, salted egg yolk mille-feuille, oolong and milk chocolate tart, hojicha milk pudding, popcorn and miso caramel Paris-Brest, wagyu beef curry bun, egg tart, focaccia, and mentaiko shio pan. The drinks menu includes the viral minus 86°C frozen coffee from Shanghai. Opening trays run 15–17 January for £4.90 (500 per day), with the full menu from 18 January.
