"The cheerful space is decked out in butter yellow and while there are only 12 seats - half inside, half outside - you can pick up Devoción coffee and treats to go, such as deeply chocolatey cupcakes made of devil's food cake, square biscuits with flaky layers of striation, and an everything bagel with slices of golden beet cured with pastrami spices, all free of dairy, soy, gluten, nuts, and eggs."
"Most notably, there's a "A Big Cinnamon Roll." Made with laminated dough, its edges crisp and the interior tender and gooey. It is indeed big, swirled with a cinnamon sugar filling, and topped with a vegan cream cheese frosting that sports a nice sweet-tang."
"The project has been in the works for over two years, inspired by partner and Fish Cheeks co-owner Jenn Saesue's husband (who she calls Bub) and his many food sensitivities. While Saesue and Chat Suansilphong were getting ready to open Bangkok Supper Club, they put out feelers for a baker who could take it on. A friend of Suansilphong recommended Weller, who made a name for herself at Per Se, Roberta's, and Sadelle's."
Bub's Bakery opened at 325 Lafayette Street in Noho with a bright butter-yellow interior and only 12 seats. The bake shop serves allergen-free versions of nostalgic items, including devil's food cupcakes, flaky square biscuits, an everything bagel topped with golden beet cured with pastrami spices, and a large laminated cinnamon roll finished with vegan cream cheese frosting. The menu and operations are dairy-, soy-, gluten-, nut-, and egg-free. The project was developed over two years, inspired by a partner's husband with multiple food sensitivities and supported by baker Melissa Weller, known for work at Per Se, Roberta's, and Sadelle's.
