Richard Hart, a British baker who opened the Green Rhino bakery in Mexico City in June, said on a podcast that Mexico does not have much of a bread culture and criticised local wheat and white rolls used for tortas as highly processed and industrially made. His April remarks went viral after food bloggers and commentators amplified them, prompting widespread outrage and accusations of cultural ignorance. Pastry chef Tania Medina and other locals objected to a foreigner disparaging Mexican culinary traditions. Hart issued an Instagram apology, saying he loved Mexico and regretted failing to act like a respectful guest.
