Now international, the widely respected dining guides are released annually, with restaurants rated by full-time anonymous inspectors with hospitality-industry pedigrees. They focus on ingredients, flavors, cooking techniques, consistency, and "the personality of the chef as expressed through their cuisine," although the stars are technically awarded to the restaurant, not the chef."
