Sub-Mission is a 1,000-square-foot subterranean cocktail lounge located beneath Mission Ceviche at 7 East 17th Street in Union Square. Guests descend into a jewel-toned interior with gold and green accents, a glowing U-shaped bar, chandelier, plush banquettes for 65, fashion portraits, moody lamps and color-shifting backlit panels. The space is designed by Chef José Luis Chávez and Brice Mastroluca to evolve from date-night chic to a late-night magnet. A drinks program developed with Oscar Valle reimagines classics with global twists, including Margarita al Pastor, a tomato-and-basil Sub Martini, mezcal-heavy Smoking Dove, and Velvet Espresso nightcap. Small plates pair Peruvian ingredients with Japanese technique.
