"Slathered with roasted onion mayonnaise and zesty zhug, this crispy yet puffy bread is piled high with fresh chicories and tender, Moroccan-spiced sweet potatoes. "It tastes quite random, not what you'd expect from a sweet potato sandwich," says Gracie Gardner, who owns Barker Cafeteria with her husband, Henry Wright. "But flavors work so well together." These sandwiches are also improbably at the center of a love story."

The focaccia is described as crispy yet puffy and is served with roasted onion mayonnaise, zesty zhug, fresh chicories, and Moroccan-spiced sweet potatoes. The sandwich flavor originated at a farmers market in Canada and built a loyal following. The cafe is owned by Gracie Gardner and Henry Wright, who met working in restaurant kitchens and named the shop after Wright's late mother. Wright brings experience from Vancouver and notable kitchens, while Gardner has a background in food education and private cheffing.
