"Pooja Aggarwal, Sandeep Patel, Harshad Patel, and Subhash Patel co-own Ikara; Aggarwal founded Indian restaurant Pippal in Emeryville, California. Arvind Poojari, general manager at Pippal, will lead the beverage program with a global wine list and cocktails "inspired by the spice markets, botanicals, and coastal regions of India," according to a press release. Poojari will infuse flavors of cardamom, tamarind, kokum (sour and tangy mangosteen fruit grown in Indian western states), and rose with classic cocktails."
"Indian fine dining is seeing a national uptick right now, with Michelin-starred Semma in New York City awarded the New York Times' top spot of the year, London's Ambassador's Clubhouse and Dishoom joining the fold in New York, Michelin-starred Gymkhana from London opening in Vegas alongside modern Rajasthani Tamba recently opening in Vegas, and more. Not to overlook New York City's new mayor, Zohran Mamdani (AKA Mr. Cardamom), popularising Indian cuisine with mom-and-pop restaurants in Queens."
