Pick & Cheese will open its first U.S. location in early 2026 at Shaver Hall in Midtown Manhattan, inside the redeveloped Lord & Taylor flagship on Fifth Avenue. The concept uses a sushi-style conveyor belt to deliver small plates of cheese with artisan pairings directly to diners. Founder Matthew Carver developed the concept after launching the Cheese Truck in 2014 and opening Cheese Bar in London's Camden, then starting Pick & Cheese at Covent Garden in 2019. The New York outpost will be the group's largest location and will focus on sourcing and celebrating American cheesemakers and artisan cheeses.
