Parche in Uptown Oakland offers music-themed pairing menus for Hispanic Heritage Month featuring Shakira, Bomba Stereo, Celia Cruz and Bad Bunny. Owner and culinary director Paul Iglesias pairs Colombian-inspired dishes with musical artists, reimagining traditional recipes using California ingredients. Dishes include a Shakira-themed ceviche reimagined as a shrimp cocktail with tomato leche de tigre and a green mango sorbet called aguita de mango. The Santa Marta ceviche uses trout in a mango leche de tigre topped with crispy salmon skin and a calamari aioli arranged to resemble jaguar skin. Empanadas are inspired by ajiao, evoking home-cooked flavors.
