Long in the chocolate industry, Korson said he can't remember another chocolate trend that has taken hold quite like this one, which piqued his curiosity. But Korson gave up cane sugar long ago. And he doesn't eat gluten or dairy either, so as much as he was intrigued, he couldn't try it himself."

The chocolatier had long experience but no longer consumes cane sugar, gluten, or dairy and therefore did not sample the trend. East Bay makers are producing Dubai-style confections. San Francisco's Charles Chocolates offers three pistachio-focused bars: original pistachio, pistachio milk chocolate caramel, and pistachio bittersweet ganache. Berkeley's Xocolate Bar sells Dubai Bites that regularly sell out. Heyma Yemeni Coffee serves a Dubai Latte and a Dubai Cheesecake featuring pistachio cream and kataifi. The profile blends sweet and salty, crunchy and creamy, and went viral on TikTok in 2023.
