Drew Nieporent opened 40 restaurants over 40 years, including Nobu and Tribeca Grill. When Montrachet launched in 1985, the prix fixe cost $16, roughly $50 adjusted for inflation. Fine-dining tasting menus have climbed steeply, with some experiences now reaching $950 to $1,000 per person or per two. Nieporent says prices have "gotten out of hand" and refuses to pay more for a meal than his $750 New York Jets ticket. He will spend $500 at Noma because it is below that threshold but declines $950-per-person Masa tastings. Post-COVID supply costs, labor shortages, and fewer reservations have pushed many restaurants to raise prices by $100 or more per person.
