Restaurant Patrick Guilbaud opened in 1981 when Dublin's dining scene was relatively stark and soon became a benchmark for fine dining. For many years the venue was the city's sole holder of two Michelin stars. Guillaume Lebrun led the kitchen from the start while Stéphane Robin managed the front of house. The restaurant attracted celebrities, captains of industry and politicians from nearby Leinster House. Numerous young chefs trained under Lebrun, gaining experience before forging independent reputations, including John Kelly, now a Michelin‑starred executive chef at Mount Juliet Estate's Lady Helen Restaurant.
