Tom Burgess, founder of Coolattin Cheddar, expressed pride in winning the World Cheese Awards for the second consecutive year with their impressive raw cows' milk farmhouse cheddar.
He emphasized the significance of the awards, stating, 'It is brilliant to be in the World Cheese Awards, this is a huge competition and to get to the top category is fantastic.'
Mr. Burgess highlighted the quality of his cheese, noting, 'We have our own cows and we make our cheese directly from the morning milk from the cows into the cheese vat.'
He attributed the excellence of Irish cheese to the cows' diet, explaining, 'This is important for the cheese quality and this is why Irish cheese is the best.'
