If for some reason you can't get your hands on Greek yogurt, you can make strained yogurt - you will need 6 cups of plain yogurt, line a strainer with a few layers of cheesecloth, and let the yogurt strain in the fridge for 6 hours.
I have not tried this recipe with dairy-free yogurt but if I were a betting gal (and I am) I would bet it will work.
