Brook trout typically measure under a foot, display spotted skin and orange bellies, and suit minimalist preparations. Flay recommends a simple brown butter and capers sauce to complement the lean fish, adding nuttiness and pops of salinity. Small trout cook rapidly over campfire embers or on a grill basket after cleaning and gutting. Simple seasoning of salt and pepper and stuffing the cavity with lemon slices or herbs enhances the finished dish.
