Kathy Fang's parents opened the House of Nanking on Kearney Street in 1988, a Chinatown restaurant known for long lines and celebrity diners including Keanu Reeves, Francis Ford Coppola and Gary Oldman. The restaurant name traces to a place Fang's grandfather visited in Shanghai. The cookbook House of Nanking, reprinted for Lunar New Year beginning Feb. 17, compiles more than 100 recipes across three generations, drawing from Cantonese and Shanghainese traditions. The book blends history, technique, equipment recommendations and sourcing tips to help home cooks recreate signature dishes. Fang, a two-time Chopped champion and Food Network personality, grew up in family restaurants, briefly pursued corporate work at Merrill Lynch and Johnson & Johnson, and returned to cooking after finding corporate life unsatisfying.
