"Whisk the flour, Dutch cocoa powder, espresso powder, baking powder, and salt in a medium bowl. Set the bowl aside for a few minutes, Using a mixer with the whisk attachment, beat the brown sugar, granulated sugar, eggs, and vanilla extract until light and frothy, about 5 minutes."
Brownie cookies combine all-purpose flour, Dutch-process cocoa, espresso powder, baking powder, salt, light brown and granulated sugars, eggs, vanilla, semisweet chocolate chips, and unsalted butter. Dry ingredients are whisked while sugars, eggs, and vanilla are beaten until light and frothy for about five minutes. Butter and chocolate chips are melted, cooled, and then incorporated into the egg mixture before folding in the dry ingredients. Dough is portioned with a large cookie scoop and baked on parchment-lined sheets at 350°F for 8–10 minutes until edges are lightly browned and centers are set. Cool briefly on sheets, then transfer to racks.
