"Wahid, who moved to New York in 2023, leads roasting efforts, overseeing a 15-kilogram Loring machine at the Shared Roasting co-roastery in Brooklyn. "Our sourcing focuses on transparent, traceable coffees with clear farm and processing details," said Wahid. "We start with a clear flavor roadmap, then source samples from trusted suppliers. We roast and cup internally before selecting coffees." At the bar, Yellow Sun's espresso is ground with a Mahlkönig E65S GBW and brewed through a Mavam Mach 2."
"Current Yellow Sun releases reflect a variety of post-harvest processing methods and countries of origin, including an anaerobic-natural-process coffee from Wadi Al-Ma'a, Yemen, a honey-process coffee from Las Lajas in Costa Rica and a natural-process coffee from the Urga District of Guji, Ethiopia. "We rotate single-origin pourover coffees every two weeks," said Wahid, noting that the company also serves matcha from UnD and pastries from Paloma."
