Papaver Roaster House is Home to Sweet Ukrainian Treats and Fresh Roasts in Olympia
Papaver Roaster House opened in Olympia inside a 1,400-square-foot space designed with golden accents, white stone, soft lighting, natural wood and luxurious cushions. The family-run shop roasts coffee on-site and produces baked goods from Ukrainian family recipes in a 4,000-square-foot off-site production facility in Lacey. The cafe features a long crystal-clear pastry case on a white quartz bar, a community table, smaller tables, lounge chairs and a commonly used chessboard. Co-owners David and Elona Sherepitka work with head roaster Ilya Kushnirenko and baker Luybov Sherepitka to present specialty coffees and traditional Eastern European sweets, including a popular honey cake recipe.
"It's a little bit surprising. People that walk in sometimes don't realize what all we do, that we roast our own coffee and bake our own goods,"
"It gives the feel of a higher-end kind of lounge - definitely not what you would traditionally see at a coffee shop or roastery."
"A lot of the recipes we're using are tied to our heritage. One of our most popular cakes right now is my mom's recipe of a very traditional honey cake that we have in basically all the Eastern European countries. So it's very close to home for us."
