Nudibranch Coffee opened in Seattle's Capitol Hill neighborhood and highlights Thai-grown coffees from Chiang Rai across espresso drinks and lattes. Menus feature flavors such as pandan, jasmine, burnt banana, tangerine, ginger and coconut. The 2,200-square-foot cafe fills with sunlight through tall windows and uses paper lanterns, floor lamps, wicker pendant lighting, ceiling drapery and cozy lounge furnishings to create a relaxed, Thai-inspired third-place atmosphere. Founder Emily Sirisup sourced green coffee from Chiang Rai's Alexta Coffee and manages international shipping to Kuma Coffee for production roasting. The espresso program uses a two-group La Marzocco Linea with a La Marzocco Jay grinder. Batch drip, manual pourover and cold brew will be added soon.
