Dullboy's beverage director, Marcelino Figueiras, aimed to innovate a digestif cocktail with the Amaro Daiquiri, drawing inspiration from a similar drink at Billy Sunday in Chicago. Collaborating with bar manager Marco Pintle, they selected amari like Sfumato for a strong backbone, Braulio for spearmint notes, and Lucano for balanced bitterness and orange hints.
