Jefferson's Reserve Cask Strength is a new release from Jefferson's Bourbon, a brand known for its innovative aging processes, such as the Ocean Aged at Sea method. This high-proof bourbon is crafted from a blend of four bourbons, with the primary eight-year base bourbon making up 65% to 70% of the blend. Founder Trey Zoeller emphasizes that while he previously preferred lower proofs, his palate has evolved to appreciate the intensity of cask-strength options. This new release seeks to showcase the bourbon's rich character without filtering, packing a punch at 130 proof and challenging drinkers to explore its flavor nuances.
"We've only done a Cask Strength in the Ocean line," Trey Zoeller says. "Reserve was released back in '97 and, at the time, 90.2 proof was right up my alley."
"But that base bourbon, it's pretty damn good straight out of the cask," he says. "So this is showcasing what the meat of our Reserve release is. It's unfiltered, cask-strength, 130 proof."
