"To fat wash the bourbon, melt the ghee in a saucepan, pour in the bourbon without stirring, then cover and put in the fridge overnight to infuse and give the bourbon time to take on some of the flavour and texture of the ghee. The next day, strain to remove the ghee (a coffee filter is the best tool), pour into a clean bottle and seal."
A jaggery old fashioned combines ghee-washed bourbon with a fennel-infused jaggery syrup for a rich Indian-flavored cocktail. The fat-washed bourbon is made by melting ghee into bourbon, chilling overnight to infuse, then straining off the solidified ghee. The jaggery syrup is prepared by dissolving jaggery with fennel seeds in cold water, cooking gently until the jaggery melts, then cooling and seasoning with flaky sea salt and Angostura bitters. Both the bourbon and syrup produce multiple servings and keep well refrigerated. To serve, stir measured bourbon and syrup with ice, strain over fresh ice, and garnish with orange peel.
