This trailblazing Bay Area restaurant just invented a new drinking culture

Flores' program establishes a new drinking culture, as El Salvador does not have much of a cocktail tradition.

El Salvador has an affinity for rum, and Popoca's list would make a tiki bar envious.Additionally, the restaurant has a one-of-a-kind bottle list full of deep cuts from Latin America, like Pox, a mixed grain alcohol from Central America and southern Mexico, as well as other Mexican spirits like gin and agave distillates like raicilla and sotol, made from cactus varieties.

I almost shrieked when I saw my favorite rum on offer: Camazotz ($13), a wildly complex Oaxacan rum, made in the agricole style with fresh sugarcane.

I think the mark of a great bar is one that compels you to return and learn more.
This is a great list of informal spots that locals have loved for years. A good contrast to the fancy lists from eater and michelin. I will note tho that there is a strong nod to nostalgia here .. not a lot of recent (last 10 year) newbies.

Holy moly. Quite a bit of transition, but a huge array of fine dining still available in SF, along with some excellent new places to try. I'm particularly excited aboput 7 Adams and Kiln.
