A team of Chinese researchers has sequenced the broccoli genome in detail, uncovering genetic secrets of glucosinolate production, responsible for broccoli's health benefits and flavor.
The study, published in Horticulture Research, mapped out broccoli's DNA to identify genes involved in producing glucosinolates, specifically glucoraphanin, which converts to cancer-fighting sulforaphane when broccoli is chopped or chewed.
