New winter cookbooks offer communal hot-pot experiences, approachable vegan breakfasts, refreshed spice exploration, and Caribbean flavors for home cooking and hosting.
Most recipes have one step in common: searing the meat to lock in flavor and build a rich foundation for the sauce. But in Jamaica, they start with a bold extra step that sets their stew apart - caramelizing brown sugar in the pan before the chicken ever hits it. That burnt-sweet base infuses the dish with a rich, dark color and deep, smoky complexity that are hallmarks of many of the best Caribbean dishes.
"I mean, you don't make it unless you make it in New York, and being that New York City is the number one location in regards to Jamaicans outside of Jamaica in the US, we thought what better place to have ties to," said Christopher Channer, a general manager at Juici Patties.
