Noah Orloff, a baker and surfer, opened Bones Bagels in Noe Valley to sell sourdough-style bagels that blend sourdough bread flavor with classic bagel chew. He developed the recipe while baking in a one-bedroom apartment after moving from San Diego and selling his stake in a San Diego bakery. He built a customer base by selling and delivering bagels around the city and promoting them on Instagram and with flyers. Home production worked while raising a child, but growing demand and the child’s mobility led to opening a separate storefront three months ago, where business has been booming.
