Al Pastor Papi, known for its Mexico City-style al pastor tacos, is transitioning from a taco truck to a brick-and-mortar location in Union Square. Chef-owner Miguel Escobedo, a co-founder of Papalote, emphasized the new store's significance, integrating lessons learned from past experiences. This venture is part of the Vacant to Vibrant program aimed at revitalizing downtown by allowing local vendors to utilize vacant storefronts, with Escobedo expressing excitement to re-engage with the community after a hiatus focusing on family and health.
"I'm combining everything I've learned into this new location," Escobedo tells the paper.
"Union Square has always been a vibrant part of San Francisco, and I'm honored to bring Al Pastor Papi to this iconic neighborhood," Escobedo said.
This pop-up represents a new chapter for us, and I can't wait to welcome both longtime fans and new customers to our O'Farrell Street location."
